    It's very easy to make these delicious and buttery shortbread biscuits. They are stuck together with redcurrant jelly, you can of course use any flavour jam you prefer.

    Makes: 55 biscuits

    • 250g butter, softened
    • 1/2 cup (125g) caster sugar
    • 2 teaspoons vanilla sugar
    • 2 eggs
    • 2 egg yolks
    • 2 cups (250g) plain flour
    • 1 1/4 cups (155g) cornflour
    • redcurrant jelly

    1. Preheat oven to 190 C.
    2. Beat butter with sugar and vanilla sugar until fluffy. Stir in eggs and egg yolks. Sift together flour and cornflour and fold in.
    3. Place into a piping bag and pipe small circles onto a greased baking tray. Bake in preheated oven for 10 minutes until golden brown.
    4. Allow to cool and stick each biscuit to another with jelly. Allow to set and store in tins.
