These German biscuits are supposed to resemble open sandwiches. Hazelnut biscuits are spread with a rum icing and then topped with chopped pistachios.


Serves: 80 

  • Biscuits
  • 3/4 cup (90g) plain flour
  • 1 1/3 cups (155g) hazelnuts, ground
  • 1/2 cup (115g) caster sugar
  • 100g butter
  • 2 tablespoons unsweetened cocoa powder
  • 1 egg
  • Icing
  • 3/4 cup (125g) icing sugar
  • 1 egg yolk
  • rum or lemon juice
  • chopped pistachios

  1. Biscuits: Work all the biscuits ingredients into a smooth dough. Shape into 5cm oval rolls, wrap and chill for 1 hour.
  2. Preheat oven to 150 degrees C. Cut the rolls into 5mm thick slices, place on a lightly greased baking tray and bake for about 20 minutes.
  3. Remove biscuits from the tray and cool on a wire rack.
  4. Icing: Mix icing sugar with egg yolks, rum or lemon juice. Spoon a circle on the biscuits and sprinkle with chopped pistachios.
