Sauteed Spinach and Capsicum

This is an attractive and tasty vegan side dish that you can throw together any time. Spinach is sauteed with capsicum, red onion and garlic. Simple and delicious.

Ingredients

Serves: 4 

  • 1 large red capsicum, coarsely chopped
  • 1 tablespoon olive oil
  • 1 small red onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 250g fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch caster sugar

Directions

  1. Heat olive oil in a large non-stick frying pan. Saute capsicum for about 1 minute. Add onions and garlic and saute until until they are soft, about 1-2 minutes.
  2. Add spinach, salt, pepper and sugar and saute for another 1-2 minutes or until spinach has wilted.
