Honey Fruit Bars

    The delicious bars are spiced with cinnamon, cloves, cardamom, nutmeg and dotted with dried fruit. For maximum flavour, allow the bars to sit for 3-5 days.

    Makes: 30 bars

    • 400g honey
    • 100g butter
    • 1 tablespoon finely grated lemon or orange zest
    • 1 tablespoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/4 teaspoon ground cardamom
    • 1/4 teaspoon freshly grated nutmeg
    • 1 egg
    • 1 cup (250ml) cream
    • 200g mixed dried fruit, finely chopped
    • 1/2 cup (125ml) rum
    • 2 1/2 cups (315g) wholemeal flour
    • 150g wheatgerm
    • 100g oats or wholemeal flour
    • 4 1/2 teaspoons baking powder
    • butter for greasing tray
    • 1 1/3 cups (155g) blanched almonds, halved
    • honey diluted in a little water, for brushing

    1. Soak dried fruit overnight in rum.
    2. Gently heat honey and butter until well incorporated. Stir in all the spices. Add egg and cream and mix well. Stir in soaked fruit and leftover rum.
    3. Mix in the flour, wheatgerm, oats and baking powder. The dough should be spreadable. If it's too thick, add a little cream or rum.
    4. Preheat oven to 190 C and grease a baking tray. Spread the batter about 1.5cm thick in the baking tray. Using a spatula dipped in cold water, smooth out the surface.
    5. Using the back of a knife, mark 6cm x 6cm squares in the batter and decorate with almonds. Brush with concentrated honey water. Bake in preheated oven for about 45 minutes.
    6. After baking, brush immediately with honey water and allow to cool slightly. Cut along the marks, allow to cool and store in a biscuit tin.
