Spiced Fruit Bread

    This delicious bread is dense, moist, fruity and lightly spiced with cloves and cinnamon. It gets even better after a day or two.

    Serves: 20 

    • 900g apples (about 5 medium), cubed
    • 1 cup (220g) caster sugar
    • 2 tablespoons rum
    • 1 tablespoon cognac
    • 200g sultanas
    • 200g whole hazelnuts, walnuts or almonds
    • 100g prunes
    • 4 cups (500g) plain spelt flour (or wheat flour)
    • 2 teaspoons baking powder
    • 1 tablespoon unsweetened cocoa powder
    • 1 pinch ground cloves
    • 1/2 teaspoon salt
    • 1 tablespoon ground cinnamon
    • 1 dash apple juice

    1. In a bowl, mix the apples with sugar, rum and cognac. Let soak overnight.
    2. Combine all remaining ingredients except apple juice in a bowl. Add the apple-rum mixture and stir well to fully incorporate. Stir in apple juice last.
    3. Preheat oven to 180 C. Line two baking trays with baking paper.
    4. Pour batter into the prepared tins and bake for 60 minutes. Remove apple bread from tins and bake for another 10-20 minutes or until the bread has turned golden brown in colour.

    Mixture was VERY dry - not a batter at all. Came out of the oven as a solid hard lump. Have I missed something? Also the instructions said line 2 trays, I think it means 2 tins.  -  01 Oct 2013  (Review from Allrecipes UK & Ireland)
