Easy Oat Biscuits

    Oat biscuits are simple to make and taste fantastic. The perfect thing for a cold afternoon with a mug of hot tea or coffee.

    Makes: 30 cookies

    • 250g butter
    • 3 1/3 cups (500g) porridge oats
    • 1 cup (220g) caster sugar
    • 3 eggs, beaten
    • 5 tablespoons plain flour

    Preparation:20min  ›  Cook:30min  ›  Extra time:10min cooling  ›  Ready in:1hour 

    1. Melt butter in a small saucepan over low heat (do not brown). Stir in oats and sugar until the sugar has completely dissolved. Remove from heat and let cool.
    2. Once completely cooled, stir in eggs. Sift in the flour and stir well.
    3. Preheat oven to 200 C and line a baking tray with baking paper.
    4. Use a spoon to make small mounds of the mixture on the baking tray. Bake in preheated oven for 20-30 minutes.

    Tasted good after a few changes  -  16 Apr 2011


    Altered ingredient amounts. I used brown instead of white sugar, and added a few extra Tbls flour as it was a very wet mixture. it only took 10 minutes to cook. I used a slice tin, as the first batch came out with burnt edges  -  16 Apr 2011
