Easy Raspberry Chocolate Biscuits

    Raspberries and chocolate are a perfect combination. These buttery biscuits are simple to make and taste fantastic. Good for birthday parties, too.

    Serves: 30 

    • 1 cup (125g) plain flour
    • 75g cold butter
    • 1 egg yolk
    • 2 tablespoons icing sugar
    • 1 teaspoon vanilla sugar
    • 1 pinch salt
    • 1/2 lemon, zest grated
    • raspberry jam for the filling
    • chocolate frosting

    1. Place flour, butter, egg yolk, icing sugar, vanilla sugar, salt and lemon zest into a food processor. Blitz until the mixture forms a dough. Cover and chill for 1 hour.
    2. Preheat oven to 200 C . Line a baking tray with baking paper.
    3. Shape dough into small balls and place on prepared baking tray. Make a dent in the centre of each ball with your fingertip.
    4. Pass raspberry jam through a sieve. Place a small amount of jam into the dent of each ball.
    5. Bake in preheated oven for 15 minutes. Let cool.
    6. Melt chocolate frosting according to package instructions and brush the bottom of the biscuits. Allow to set.
