This recipe makes two cakes and the cakes just get better with age. If you can, bake them a few days ahead!

Serves: 24 

  • 3 teaspoons instant coffee granules
  • 225m hot water
  • 4 eggs, separated
  • 155g caster sugar
  • 5 tablespoons (100ml) vegetable oil
  • 2/3 cup (225g) honey
  • 375g plain flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice

Preparation:30min  ›  Cook:40min  ›  Ready in:1hour10min 

  1. Mix coffee in hot water, and then cool.
  2. In a large bowl, beat the yolks with the sugar until creamy. Add the oil and then the honey, beating after each addition. Beat until the mixture is smooth and creamy.
  3. Sift the flour. Combine with salt, baking powder, bicarb soda and spices. Add these dry ingredients alternately with the coffee to the honey mixture, stirring only until blended. Do not overmix.
  4. Whip egg whites until stiff. Fold in three additions into the batter. Pour into 2 greased 20cm square pans.
  5. Bake at 160 degrees C for 35 to 40 minutes, or until a skewer inserted into the centre of cake comes out clean.

Good old fashioned comfort pud. Moist and delicious with a pretty, pebbly top. Mine was done at 38 minutes! - 18 Jul 2008


This recipe made a big hit. It doesn't have the bitter taste usually associated with honey cakes. We loved it. - 18 Jul 2008
