Easy Swirl Biscuits

    For how pretty these biscuits look, they are very simple to make with the aid of poppy seed cake mix. Perfect with a big mug of tea.

    Serves: 8 

    • Biscuits
    • 1 3/4 cups (220g) plain flour
    • 1/4 cup (60g) caster sugar
    • 1 teaspoon vanilla essence
    • 150g butter
    • Filling
    • 250g poppy seed cake mix
    • 5-7 tablespoons cream
    • 1/2 teaspoon ground cinnamon

    1. Biscuits: Work flour, sugar, vanilla sugar and butter into a smooth dough. Wrap and chill for 30 minutes.
    2. Filling: Mix together cream, cake mix and cinnamon until smooth.
    3. To Assemble: Roll out dough to 35cm x 20cm rectangle (about 3mm thick). Spread cream mixture evenly on top.
    4. From the long side, roll up like a Swiss roll. The resulting roll should be about 3cm in diameter. Wrap and chill for 30-60 minutes.
    5. Preheat oven to 180 degrees C and line a baking tray with baking paper.
    6. Cut roll into 4mm slices and lay on the prepared tray. Bake for 20 minutes in preheated oven. Cool and store in tins.
