Cinnamon Plum Tart

    A fruit tart that is delicious and very easy to make. Perfect with vanilla ice cream or whipped cream, so the sweetness of the cream can balance the tartness of the plums.

    Makes: 24 pieces

    • 4 3/4 cups (590g) plain flour
    • 300g butter, room temperature, cut into cubes
    • 1 cup (220g) caster sugar
    • 4 teaspoons baking powder
    • 2 teaspoons vanilla sugar
    • 2 pinches salt
    • 2 eggs
    • 1 teaspoon ground cinnamon
    • 1kg plums
    • flaked almonds (optional)
    • extra butter for topping
    • 2 tablespoons caster sugar for sprinkling

    1. Mix flour and baking powder in a large bowl. Add 200g sugar, vanilla sugar and salt; mix together. Add butter and egg; knead into a smooth dough. Chill for 1 hour or overnight.
    2. Wash plums, cut in half, remove stones and cut in half again (don't cut all the way through).
    3. Preheat oven to 180 C. Grease a baking tray with butter.
    4. Roll out the pastry on a floured work surface and line the bottom and sides of the baking tray with the dough.
    5. Mix 2 tablespoons sugar with 1 teaspoon ground cinnamon. Set aside.
    6. Lay quartered plums side by side onto the dough. If the plums are very small, arrange them in such a way that they overlap. Dot with butter and sprinkle with cinnamon sugar and almonds, if using.
    7. Bake in preheated oven for about 30-40 minutes.
    8. Remove tray bake from oven and allow to cool slightly. Cut into pieces and serve warm or cold.

    What a crumbly mess. I followed the recipe to the tee, but the result was a very crumbly, messy shortbread cookie with plums on top. It tasted good, but really wasn't worth the bother.  -  12 Oct 2018  (Review from Allrecipes USA and Canada)
