Fresh Plum Pie

    Plum pie is a delicious alternative to apple pie, very sweet and tart when plums are in season. Serve with whipped cream or ice cream for dessert.

    Serves: 12 

    • Pastry
    • 2 1/2 cups (315g) plain flour
    • 1/2 teaspoon baking powder
    • 200g butter
    • 1 cup (220g) caster sugar
    • 1 teaspoon vanilla sugar
    • 1 egg
    • Filling
    • 2 cups sliced plums, juice reserved
    • 2 lemons, juiced
    • 2 teaspoons vanilla sugar
    • 2 heaped tablespoons cornflour
    • To Serve
    • icing sugar

    1. Pastry: Mix together flour and baking powder. Add remaining pastry ingredients and work into a pastry dough. Cover and chill for 1 hour.
    2. Grease a pie dish and lightly flour a work surface. Cut dough in half and roll out one piece. Line the bottom and sides of the tin with pastry dough.
    3. Filling: Place reserved plum juice, lemon juice and cornflour into a small pan. Heat until thickened. Let cool, then drizzle over pastry-lined tin.
    4. Layer plums on top and sprinkle with vanilla sugar.
    5. Preheat oven to 180 C.
    6. Roll out remaining pastry dough and place over the plums, or create a decorative crust with thin strips of dough. Bake in preheated oven for 1 hour.
    7. To Serve: Dust with icing sugar.
