Easy Orange Biscuits

    These biscuits capture the true essence of oranges in a biscuit and icing that includes, orange juice, orange peel, orange zest and orange liqueur.

    Makes: 60 biscuits, depending on size

    • 1 orange
    • butter, for greasing baking tray
    • 125g butter, at room temperature
    • 1/2 cup (125g) caster sugar
    • 4 tablespoons orange liqueur
    • 1 pinch salt, to taste
    • 2 eggs
    • 1 1/4 cups (280g) plain flour
    • icing sugar
    • orange juice

    1. Peel half of the orange zest with a vegetable peeler and grate the rest. Juice the orange and set aside for the icing.
    2. Preheat oven to 200 degrees C. Grease two baking trays.
    3. Beat butter until fluffy. Add sugar, grated orange zest, orange liqueur, salt and eggs. Beat everything until thick and creamy. Fold in flour.
    4. Place small mounds of batter onto the baking tray using two teaspoons. Leave enough room for them to spread. Place orange zest strips in the corner of the baking tray.
    5. Bake in preheated oven for about 12 minutes or until golden brown.
    6. Cool slightly and then remove from the baking tray. Crumble cooled orange zest strips.
    7. Mix icing sugar and enough orange juice to create a thick icing.
    8. Decorate each biscuit with a small blob of icing and sprinkle with crumbled orange zest. Let set before eating.
