Bacon and Onion Flan

This flan is made in a homemade pastry then filled with sautéed bacon and onion along with a cream and egg custard. We have eaten this for every meal including breakfast, brunch, lunch and dinner.

Ingredients
Serves: 6
- margarine for greasing tin
- 2 cups (250g) plain flour, sifted
- 125g margarine
- 1 egg
- 1 pinch salt, to taste
- 200g bacon, diced
- 15g butter
- 500g onions, diced
- 3 eggs
- 150g thickened cream
- salt freshly ground black pepper, to taste
- 2 tablespoons caraway seeds

- Grease a 25cm round springform tin.
- Work sifted flour, margarine, egg and salt into a smooth dough. Cover and chill for at least 30 minutes.
- Fry the bacon in butter. Add onions and fry over very low heat for 30 minutes. Set aside and cool slightly.
- Preheat oven to 220 degrees C.
- Line base and sides of prepared tin with dough. Fill with onion mixture.
- Whisk together remaining eggs with cream, salt and pepper. Pour over the onion mixture.
- Sprinkle with caraway seeds and bake for about 40 minutes or until the top is lightly browned.
