Bacon and Onion Flan

    This flan is made in a homemade pastry then filled with sautéed bacon and onion along with a cream and egg custard. We have eaten this for every meal including breakfast, brunch, lunch and dinner.

    Serves: 6 

    • margarine for greasing tin
    • 2 cups (250g) plain flour, sifted
    • 125g margarine
    • 1 egg
    • 1 pinch salt, to taste
    • 200g bacon, diced
    • 15g butter
    • 500g onions, diced
    • 3 eggs
    • 150g thickened cream
    • salt freshly ground black pepper, to taste
    • 2 tablespoons caraway seeds

    1. Grease a 25cm round springform tin.
    2. Work sifted flour, margarine, egg and salt into a smooth dough. Cover and chill for at least 30 minutes.
    3. Fry the bacon in butter. Add onions and fry over very low heat for 30 minutes. Set aside and cool slightly.
    4. Preheat oven to 220 degrees C.
    5. Line base and sides of prepared tin with dough. Fill with onion mixture.
    6. Whisk together remaining eggs with cream, salt and pepper. Pour over the onion mixture.
    7. Sprinkle with caraway seeds and bake for about 40 minutes or until the top is lightly browned.
