    These are a very easy to make biscuit that can easily be adjusted to suit your tastes, simply pick your favourite muesli.

    Makes: 60 depending on size

    • 15g butter, for greasing the tray
    • 125g butter
    • 250g oats, divided
    • 2 eggs
    • 100g caster sugar
    • 1 teaspoon vanilla sugar
    • 1 teaspoon baking powder
    • 250g dates, stones removed and finely diced

    Preparation:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C. Grease a baking tray with butter.
    2. In a small saucepan melt butter and stir in the oats. Remove from heat and let cool.
    3. Mix the eggs, sugar, vanilla and baking powder together. Stir in dates and buttered oats.
    4. Take 2 teaspoons of mixture and place in small piles on the prepared baking tray.
    5. Bake in the preheated oven for about 20 minutes.

    Really easy to make. Really ought to come with a health warning....VERY moreish!!! These were devoured within a couple of hours of coming out of the oven.
