Marzipan and Jam Sandwich

    Two beautiful buttery biscuits sandwich a rum flavoured marzipan and jam together before finally being applied an apricot liqueur glaze and a sprinkle of pistachios.

    Makes: 35 biscuits, depending on size

    • Biscuits
    • 4 cups (500g) plain flour
    • 1 cup (220g) caster sugar
    • 1 pinch salt, to taste
    • 1 egg
    • 200g butter
    • Filling
    • 250g marzipan
    • 1/2 cup (90g) icing sugar
    • 2 tablespoons dark rum
    • 2 tablespoons sugar
    • 125g apricot jam
    • Glaze
    • 1/2 cup (125g) caster sugar
    • 2 tablespoons apricot liqueur
    • To Decorate
    • 30g pistachios, finely diced

    1. Biscuits: Work all the biscuit ingredients into a smooth dough.
    2. Shape into a ball, wrap in foil and chill for 1 hour.
    3. Preheat oven to 180 degrees C. Grease and line a baking tray with baking paper.
    4. Roll out the dough on a floured surface. Use a pastry/biscuit cutter to cut into the shapes you desire. If you are making different shaped biscuits, make sure you have pairs of each.
    5. Transfer onto prepared baking tray and bake in preheated oven for 10-15 minutes.
    6. Filling: Knead marzipan with icing sugar and rum.
    7. On a sugar-dusted surface roll to 3mm thickness. Cut out the same shapes as the dough but only half as many.
    8. Glaze: Combine the icing sugar, liqueur and some water.
    9. Assembly: Brush the finished biscuits with jam.
    10. Place one piece of marzipan between two biscuits and press together.
    11. Brush the biscuits with the glaze then sprinkle with diced pistachios.
