Marzipan Cookies

    If you enjoy the almond flavours of marzipan you will love these cookies/biscuits. Quick and easy to make when cooled they are brushed with rose water.

    Makes: 40 biscuits, depending on size

    • 500g marzipan
    • 1/2 cup (90g) icing sugar
    • 1 egg white
    • 2 tablespoons plain flour
    • rose water

    Preparation:20min  ›  Cook:15min  ›  Extra time:8hours drying  ›  Ready in:8hours35min 

    1. Knead marzipan, icing sugar, egg and flour into a smooth dough.
    2. Roll out to 1cm thickness and cut out into whatever shapes you like.
    3. Line a baking tray with baking paper and place the biscuits on it. Allow to dry overnight.
    4. Preheat oven to 160 degrees C. Bake for 15 minutes until lightly browned.
    5. Let cool; once cool brush with rose water.

    I really liked the end result but found it a tricky dough to get right. On the given quantities it was too sticky to even begin rolling so I added more flour/icing sugar. I also added a chocolate icing which went down well.  -  07 Jan 2012  (Review from Allrecipes UK & Ireland)
