Apple and Vanilla Cake

This is a very easy apple cake that uses a very thin batter with fresh vanilla. The batter is then combined with thinly sliced apples before baking.


Makes: 1 cake

  • 2 eggs
  • 1 1/4 cups (250g) caster sugar
  • 100g butter, melted and cooled
  • 3/4 cup (90g) plain flour
  • 2 teaspoons baking powder
  • 2 pods vanilla, seeds scraped out
  • 1 pinch salt, to taste
  • 100ml milk
  • 900g apples, peeled, cored and thinly sliced

  1. Preheat oven to 190 degrees C. Grease and line a round 30cm springform cake tin.
  2. Beat together eggs and sugar until light and fluffy. Stir in butter.
  3. Fold in flour, baking powder, vanilla seeds, salt and milk. The batter should be quite runny.
  4. Fold in apples and pour into prepared tin.
  5. Bake in preheated oven for about 30 minutes.
  6. Cover with foil, so the top does not burn and bake for an additional 15 minutes.
