Grinding your own almond meal guarantees you will receive the maximum flavour of these nutty biscuits.


Makes: 40 biscuits

  • 300g almonds
  • 1 cup (220g) caster sugar
  • 1 pinch salt, to taste
  • 1/2 teaspoon vanilla essence
  • 4 egg whites

  1. Preheat oven to 150 degrees C.
  2. Pour boiling water over the almonds in a heatproof bowl. Cool and remove skin.
  3. Dry almonds with paper towels then finely grind with sugar in a food processor. Add salt and vanilla.
  4. Whisk egg whites until very stiff then mix well with the almond paste.
  5. Line two baking trays with baking paper and use a teaspoon to spoon small heaps of dough onto the trays. Space well between each.
  6. Bake for 30 minutes until the biscuits are lightly browned.
  7. Cool down on a wire rack. Repeat with the second baking tray.
