These are a light biscuit that is flavoured by almond oil, ground hazelnuts and vanilla. They are ideal for afternoon tea with your friends and a coffee.


Serves: 40 

  • 3 egg whites
  • 2/3 cup (155g) caster sugar
  • 1/2 teaspoon vanilla essence
  • 2 drops bitter almond oil or almond essence oil to taste
  • 150g hazelnuts, ground
  • 25g plain flour

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Preheat oven to 160 degrees C. Line a baking tray with baking paper.
  2. Whisk egg whites until very stiff then gradually whisk in the sugar and vanilla sugar.
  3. Mix together hazelnuts, flour and almond oil. Fold into egg whites.
  4. Use two teaspoons to make mounds on the prepared baking tray.
  5. Bake in preheated oven for 25 minutes. Let cool on the tray.
