Gluten Free Cinnamon Biscuits

    These are a wonderful biscuit that always remind me of Christmas. They are spiced with cinnamon, cloves, vanilla and contain mixed peal.

    Makes: 25 depending on size

    • 3 eggs
    • 2 1/4 cups (250g) almond meal
    • 1 1/4 cup (250g) caster sugar
    • 1/2 teaspoon vanilla essence
    • 70g hazelnuts, ground
    • 1 pinch ground cloves, to taste
    • 2 teaspoons ground cinnamon
    • 100g cut mixed peel
    • 70mm round edible rice paper
    • dark chocolate, milk chocolate or icing sugar for coating

    1. Combine eggs, almond meal, sugar, vanilla, hazelnuts, cloves, cinnamon and mixed peel in a bowl then mix together.
    2. Shape the mixture into balls and press flat on rice paper. The resulting mixture should be no more than 1.5cm high.
    3. Place on a baking tray lined with baking paper leaving adequate room for spreading.
    4. Preheat oven to 180 degrees C and bake for 15-20 minutes or until light brown in colour.
    5. Decorate with your choice of coating.

    Edible rice paper can be purchased in speciality shops or online.
