Almond Heart Biscuits

    These are easy to make gluten free biscuits that are in the shape of a heart. As soon as they come out of the oven they are coated in a hot sugar glaze.

    Serves: 40 

    • 15g butter
    • 2 egg whites
    • 1 cup (250g) caster sugar
    • 1/2 teaspoon vanilla essence
    • 1 pinch salt, to taste
    • 1 tablespoon cocoa powder
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground cloves
    • few drops rum essence
    • 1/2 teaspoon baking powder
    • 2 1/4 cups (250g) almond meal
    • 2 tablespoons finely almond meal
    • Icing
    • 1 cup (155g) icing sugar
    • 1/2 cup (125ml) water, as required

    1. Preheat oven to 180 degrees C.
    2. Melt the butter then allow it to solidify. Set aside.
    3. Whisk egg whites until stiff. Beat in the sugar, vanilla essence and salt. Mix in the butter, cocoa, baking powder and spices.
    4. Fold almond meal into the batter. The dough should be quite firm.
    5. Sprinkle 2 tablespoons almond meal over a work surface and place the dough on top.
    6. Lay a piece of plastic wrap directly on top of the dough. Roll out to 1cm thickness. Remove plastic wrap and cut out into hearts. Note: If the dough is very sticky mix in more almond meal.
    7. Transfer hearts to greased baking trays leaving enough space for them to spread whilst cooking. Bake for 15 minutes.
    8. Meanwhile bring icing sugar and water to the boil. Brush over the biscuits as soon as they come out of the oven. Allow to cool and set.
