Homemade Apple Fritters

Sliced apples are dipped in what becomes a thick, puffy and crunchy batter. Serve warm dusted with cinnamon sugar or icing sugar.


Serves: 25 

  • 4 large apples, peeled, cored and cut into 5mm slices
  • 1 tablespoon lemon juice
  • Batter
  • 1 cup (250ml) wine
  • 1 3/4 cups (225g) plain flour
  • 35g sugar
  • 1 pinch salt, to taste
  • 1/2 lemon, zested
  • 3 egg whites
  • Frying
  • 1.5 kg clarified butter (ghee), for frying
  • To Serve
  • cinnamon sugar or icing sugar

  1. Toss apples with lemon juice and set aside.
  2. Stir together wine, flour, sugar, salt and lemon zest to form a smooth batter.
  3. In a clean bowl, whisk egg whites until stiff. Fold into batter gently.
  4. Heat clarified butter in a large saucepan. Test temperature with a wooden cooking spoon; when you immerse spoon into oil bubbles should rise.
  5. Dip sliced apples into the batter and fry until golden brown; about 3 minutes.
  6. Sprinkle with cinnamon sugar or icing sugar and serve warm.
