White Chocolate Truffles

    These white chocolate truffles are easy to make and taste great, I like the coconut rum and have been known to add a bit extra.

    Makes: 30 truffles, depending on size

    • 250g white chocolate, broken into chunks
    • 1 tablespoon milk
    • 125g butter, softened
    • 1 tablespoon coconut rum
    • 150ml thickened cream

    Preparation:25min  ›  Cook:5min  ›  Extra time:1hour cooling  ›  Ready in:1hour30min 

    1. Melt chocolate with milk in a double boiler. Stir continuously until smooth. Remove from heat.
    2. Add butter and coconut rum then stir well.
    3. Whisk thickened cream until stiff then stir into chocolate for 1 minute. Chill until firm; about 1-2 hours.
    4. Scoop out small portions of the ganache and form into balls. Place into small paper cake cases and store in the refrigerator.

    I have tried to make White Chocolate truffles 3 times now from 3 different recipes but it doesn't work! My plain chocolate truffles are always great, but white chocolate ones never thicken enough to make into truffles. I think there is something about the texture or density of white chocolate that makes it impossible to work! It always stays runny and gloopy, even with added sugar, chocolate, frozen for a while etc. Stick with plain chocolate ones and don't bother with white chocolate, it simply does not work!  -  23 Dec 2013  (Review from Allrecipes UK & Ireland)
