Chocolate Dipped Vanilla Fingers

These are a beautiful sweet biscuit that I love to make with friends. Rich buttery vanilla biscuits are made then they are joined together in pairs with jam and finally dipped in chocolate.


Serves: 30 

  • 200g butter
  • 3/4 cup (125g) icing sugar
  • 4 egg yolks
  • 1 teaspoon vanilla essence
  • 40g almond meal
  • 1 3/4 cup (225g) plain flour
  • To Decorate
  • any tart jam
  • chocolate, melted

Preparation:25min  ›  Cook:10min  ›  Ready in:35min 

  1. Beat butter until fluffy then stir in sugar. Gradually beat in egg yolks and vanilla essence. Add almond meal and flour. Stir well.
  2. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
  3. Place batter into a piping bag and pipe small fingers onto tray.
  4. Bake in preheated oven for 10-15 minutes or until golden brown.
  5. Allow biscuits to cool. Heat jam and use to stick two fingers together then dip halfway in melted chocolate. Let set.
