Walnut and Chocolate Biscuits

    More than just walnuts and chocolate make these special they also have a good dash of spice including cloves, allspice and almond essence.

    Makes: 40 

    • 100g dark chocolate
    • 100g walnuts
    • 1 cup (125g) plain flour
    • 1/4 cup (60g) caster sugar
    • 125g cold butter, cut into small pieces
    • 1 pinch ground cloves, to taste
    • 1 pinch ground allspice, to taste
    • 4-6 drops bitter almond essence
    • butter to grease the baking tray
    • 150g dark chocolate

    1. Finely dice chocolate and walnuts together. Set aside.
    2. Form a mound of flour, sugar, butter and spices on a work surface.
    3. Blend all the ingredients together with a knife then knead with your hands to form a firm dough. Roll the dough into logs of 2.5-3cm in diameter.
    4. Cover and chill for at least 1 hour.
    5. Preheat oven to 200 degrees C and grease a baking tray.
    6. Cut the dough logs into 1cm thick pieces and lay onto prepared baking tray.
    7. Bake for approximately 15 minutes. Let biscuits cool in the tin for 2-3 minutes then transfer to a wire rack to cool fully.
    8. Melt chocolate a bowl over simmering water or in the microwave then dip biscuits half way in. Transfer to a sheet of baking paper and allow to set.
