Chocolate Coated Almond Shortbread

Easy almond flavoured (from marzipan) buttery shortbread is covered in a chocolate coating to create a wonderful snack, morning or afternoon tea.


Makes: 60 biscuits, depending on size

  • 50g marzipan
  • 2 small eggs
  • 250g butter, softened
  • 1 3/4 cup (220g) plain flour
  • 1 1/2 cups (185g) cornflour
  • 40g unsweetened cocoa powder
  • 2/3 cups (155g) caster sugar
  • 1 pinch salt, to taste
  • 100g dark chocolate

  1. Preheat oven to 170 degrees C. Line a baking tray with baking paper.
  2. Crumble the marzipan. Separate 1 egg and mix the yolk with the marzipan.
  3. With electric mixer add the egg white, a whole egg, butter, flour, cornflour, cocoa, sugar and salt. Beat well.
  4. Transfer batter into a piping bag with large star nozzle. Pipe round O shapes onto the baking tray.
  5. Bake for 12 minutes in the preheated oven. Allow to cool.
  6. Melt the chocolate in a bowl over simmering water or in the microwave then decorate the biscuits with it.
