Spiced Chocolate and Date Cake

    If you are looking for something a bit different I recommend this date cake that has a chocolate and spice batter that includes vanilla, cinnamon and mixed spice.

    Serves: 40 

    • 130g butter, softened
    • 1/4 cup (60g) caster sugar
    • 3-4 small eggs
    • 1/2 teaspoon vanilla essence
    • 1 teaspoon ground cinnamon
    • 1 pinch mixed spice, to taste
    • 150g dates, roughly diced
    • 100g ground nuts
    • 2 tablespoons cocoa powder
    • 1 dash rum or cognac, to taste
    • 3/4 cup (90g) flour
    • 1/4 cup (30g) cornflour
    • 2 teaspoons baking powder
    • 2 tablespoons caster sugar, for sprinkling
    • For the Glaze
    • apricot jam, mixed with a little water
    • chocolate cake frosting

    1. Beat butter until fluffy. Gradually beat in sugar, eggs and vanilla essence.
    2. Stir in the cinnamon, mixed spice, dates, nuts, cocoa powder, rum, flour and cornflour. Fold in the baking powder last.
    3. Preheat oven to 180 degrees C.
    4. Spread the batter about 3cm thick into a baking tray lined with baking paper. Bake for about 20 minutes.
    5. Turn the cake out onto a sheet of baking paper sprinkled with 2 tablespoons sugar.
    6. Brush the cake with diluted jam. Let cool.
    7. Spread the chocolate frosting over the cake.
    8. Cut the cake into large slices and then into small squares just before serving. This will ensure that they don't dry out.
