Chocolate Dipped Shortbread

First you make a simple shortbread recipe that uses almond meal for an added dimension then they are dipped in chocolate.


Makes: 50 

  • 250g butter
  • 1 cup (250g) caster sugar
  • 1/2 teaspoon vanilla essence
  • 1 egg
  • 3 cups (375g) plain flour
  • 2 1/4 cups (250g) almond meal
  • 100g dark chocolate, melted

  1. Beat butter, sugar and vanilla essence until fluffy. Stir in egg and flour then stir in the almonds last.
  2. Preheat oven to 190 degrees C. Line a baking tray with baking paper.
  3. Pour the batter into a piping bag with star nozzle. Pipe into any shape you prefer onto preparing baking tray.
  4. Bake shortbread in preheated oven for 10-15 minutes. Leave the biscuits to cool.
  5. Melt the chocolate in a bowl over simmering water or in the microwave then dip the cooled biscuits halfway in chocolate covering.
  6. Let set then store in an airtight container until needed.
