This is a great cake that has a layer of apples baked into the top, the cake itself has a range of subtle flavours including chocolate, cinnamon and vanilla.

- 200g butter
- 1 cup (220g) caster sugar
- 4 medium eggs
- 1 teaspoon vanilla essence
- 1 tablespoon ground cinnamon
- 1 tablespoon cocoa powder
- 1 3/4 cups (185g) plain flour
- 2 teaspoons baking powder
- 5-6 tart apples, peeled, cored, quartered and sliced
- icing sugar, for dusting

- Preheat oven to 200 degrees C. Grease a round springform cake tin with butter.
- Cream butter and sugar until fluffy. Gradually beat in the eggs one at a time and with the final egg add the vanilla essence.
- Mix cinnamon, cocoa, flour and baking powder in a bowl. Fold into the creamed mixture.
- Pour 2/3 of the batter into the prepared cake tin then arrange apple slices on top. Cover with remaining batter.
- Bake in preheated oven for about 60 minutes. Cool on a wire rack and dust with icing sugar.
