Sliced Apple Cake

This cake is baked with large slices of apple stirred through it then glazed with jam before finely being finished with a light lemon icing.


Serves: 12 

  • Cake
  • 125g unsalted butter or margarine
  • 1/2 cup (125g) caster sugar
  • 3 eggs
  • salt, to taste
  • 4 drops lemon essence
  • 1 1/2 cups (185g) plain flour
  • 2 teaspoons baking powder
  • 4 tablespoons milk
  • 3 apples, peeled, cored and sliced
  • Glaze
  • 2-3 tablespoons apricot jam
  • icing sugar
  • lemon juice

  1. Cake: Preheat oven to 180 degrees C. Grease a round springform cake tin.
  2. Beat butter until fluffy then gradually beat in the sugar, eggs, salt and lemon essence.
  3. Mix together flour and baking powder, sift into the batter then fold in. Stir in just enough milk to make a cake like batter.
  4. Fold in apples and pour into prepared cake tin. Bake in preheated oven for 40-50 minutes.
  5. Glaze: Brush with apricot jam whilst warm.
  6. Mix just enough icing sugar and lemon juice to make a drizzly icing then brush onto the cake.
