Lebanese Baked Apples

    These baked apples are stuffed with traditional Lebanese flavours and ingredients including rose water, sultanas, apricots, crystallised ginger and lime.

    Serves: 4 

    • 1 1/4 cups (250g) caster sugar
    • 2 cups (500ml) water
    • 2 tablespoons rose water
    • 50g dried apricots, diced
    • 2 tablespoons diced crystallised ginger
    • 100g sultanas
    • 2 organic lemons, zested
    • 4 apples (Granny Smith or similar)

    1. Preheat oven to 180 degrees C. Grease a baking dish.
    2. Bring sugar, water and rose water to the boil and simmer for 4 minutes. Pour liquid into baking dish.
    3. Mix apricots, ginger, sultanas and lemon zest together.
    4. Core apples and stuff with dried fruit mixture. Transfer to baking dish and spoon over syrup.
    5. Cover tightly with foil and bake in preheated oven for 20-30 minutes or until apples are soft. Baste apples occasionally with the syrup as they cook.
