Oven Poached Cinnamon Apples

Cored apples dusted in cinnamon are oven poached in apple juice to create a moist baked apple. Serve with the poaching liquid.

- 4 large apples, washed, patted dry and core removed
- 1/2 cup (125g) caster sugar
- 1/2 teaspoon ground cinnamon
- 1 cup (250ml) apple juice

- Preheat oven to 180 degrees C.
- Place apples in a small glass baking dish. Mix together sugar and cinnamon then sprinkle on apples, inside and out.
- Pour enough apple juice into the baking dish so that apples are sitting in 1-2cm juice.
- Bake in preheated oven for about 45-55 minutes, basting every 15 minutes.
- They are done when tender (test with a sharp knife). Serve with the hot apple juice.
