Baked Apples with Homemade Custard

    A simple non-stuffed baked apple is served with a delicate homemade custard that uses a fresh vanilla bean pod.

    Serves: 4 

    • Vanilla Custard
    • 3 egg yolks
    • 3 tablespoons caster sugar
    • 1 tablespoon cornflour
    • 1 1/2 cups (375ml) milk or more to taste
    • 1 vanilla bean
    • Baked Apples
    • 4 large apples
    • 1/2 cup (125g) caster sugar
    • 1/2 teaspoon ground cinnamon
    • 1 cup (250ml) apple juice

    1. Vanilla Custard: Mix egg yolks, sugar and cornflour with just enough milk to make a smooth paste. Stir in scraped out vanilla seeds and the bean pod.
    2. Place remaining milk into a cold saucepan then whisk in the paste and bring to the boil. If you prefer a thinner sauce, add more milk.
    3. Simmer until the sauce begins to thicken, stirring constantly.
    4. Remove vanilla bean pod. Allow sauce to cool then chill for a few hours. Whisk before serving.
    5. Baked Apples: Preheat oven to 180 degrees C.
    6. Wash apples, dry, core and place in a small baking dish.
    7. Mix together sugar and cinnamon then sprinkle over the apples inside and out.
    8. Pour enough apple juice into the baking dish so that the apples are sitting in 1-2cm juice.
    9. Bake in preheated oven for about 45-55 minutes, basting every 15 minutes. Test if cooked with a knife; the apples should feel soft.
    10. To Serve: Place apple while still warm in a bowl and cover with chilled vanilla custard.
