Ginger Baked Apples

    A quick, healthy and easy dessert that has an almond, sugar, butter and ginger mix stuffed in a cored apple and baked. Serve warm with ice cream.

    Serves: 4 

    • 4 medium apples, washed and dried
    • Filling
    • 3 tablespoons ground almonds
    • 1 teaspoon caster sugar
    • 30g butter
    • 2 pieces crystallised stem ginger, cut into small strips
    • 2 tablespoons ginger juice

    1. Mix almonds, sugar and butter. Set aside.
    2. Preheat oven to 230 degrees C. Grease baking tray or ovenproof dish.
    3. Core apples and stuff with the almond mixture. Place the ginger pieces in the openings of each apple. Sprinkle with ginger juice.
    4. Place apples in prepared tray/dish and bake in preheated oven about 30 minutes. Serve immediately.

    Ginger juice

    Finely dice (or blend in a food processor) fresh ginger. Place into a tea towel and squeeze out the juice.
