Brown Sugar Baked Apples

    Gently basted in a vanillia and apple juice these brown sugar and cinnamon apples are a beautiful dessert. Serve with vanilla custard.

    Serves: 4 

    • 4 large apples
    • 3/4 (125g) dark brown soft sugar
    • 1/2 teaspoon ground cinnamon
    • 1 cup (250ml) unfiltered apple juice
    • 1 teaspoon vanilla essence

    1. Preheat oven to 180 degrees C.
    2. Wash apples, pat dry and remove cores with an apple corer. Transfer to a small baking dish. Sprinkle apples inside and out with brown sugar and cinnamon.
    3. Mix together vanilla essence and apple juice. Pour into the baking dish so that the apples are sitting in 1-2cm juice.
    4. Cook for about 45-55 minutes basting occasionally with the apple juice.
    5. Apples are ready when they are tender. Serve with vanilla custard.
