Apple and Lady Finger Trifle

    Built similar to a Tiramisu layers of lady fingers are soaked with a milk Cointreau mixture then layers including apples and whipped cream build the finished product.

    Serves: 6 

    • lady finger biscuits (also known as savoiardi or boudoir fingers) as needed
    • 100ml milk
    • 6-8 tablespoons Cointreau (orange liqueur)
    • 500g apple puree or stewed apples
    • 1 cup (250ml) thickened cream
    • 1/2 teaspoon vanilla essence
    • unsweetened cocoa powder to dust

    1. In a rectangular dish arrange a layer of lady fingers.
    2. Mix together milk and Cointreau. Drizzle half of this mixture over the lady fingers. Spread half apple over the top.
    3. Whisk cream and vanilla essence together. Spread half of this onto the apple.
    4. Arrange a layer of lady fingers on top and repeat apple sauce layer then a whipped cream layer.
    5. Finally dust with cocoa and chill for a few hours.
