This is a beautiful apple dessert with a pie shell containing a cottage cheese layer then an apple layer and finally topped with a streusel. Perfect served hot with cream or ice cream.


Serves: 16 

  • Pastry
  • 2 1/2 cup (300g) plain flour
  • 150g unsalted butter
  • 1/3 cup (90g) caster sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • rum essence
  • Filling
  • 500g cottage cheese
  • 30g unsalted butter, melted
  • 2 tablespoons sugar
  • 5-7 apples
  • Streusel
  • 1 3/4 cups (200g) plain flour
  • 1/3 cup (90g) caster sugar
  • 100g unsalted butter

Preparation:30min  ›  Cook:1hour  ›  Extra time:30min cooling  ›  Ready in:2hours 

  1. Pastry: Work flour, butter, sugar, eggs, baking powder and rum essence into a pastry dough. Cover and chill for 30 minutes.
  2. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
  3. Filling: Mix together cottage cheese, sugar and butter in a bowl until smooth.
  4. Peel the apples, core and cut finely.
  5. Streusel: Mix flour with sugar and stir in the melted butter.
  6. Assembly: Roll out pastry dough on a lightly floured surface. Place onto prepared baking tray.
  7. Spread cottage cheese mixture onto the dough then top with apple and sprinkle with the streusel mixture.
  8. Bake in preheated oven for 1 hour.
