Apple and Thyme Chutney (Stewed Apples)

Stewed apples are a traditional accompaniment to pork but this apple chutney may change your mind. Apples with thyme, bay, schnapps and vinegar create the perfect pork match.


Serves: 6 

  • 3 large apples, peeled, cored and diced
  • 1 tablespoon dried thyme
  • 1 bay leaf
  • 1/4 cup (60g) caster sugar
  • 2 tablespoons apple schnapps or Calvados
  • 2 tablespoons apple cider vinegar
  • salt, to taste

  1. In a small heavy saucepan combine apples, thyme, bay leaf, sugar, apple schnapps and apple cider vinegar.
  2. Simmer for 1 to 1 1/4 hours, partially covered or until the chutney is thick and sticky. Stir occasionally.
  3. Season to taste with salt. Remove bay leaf and serve warm or lukewarm.
