Apple and Spice Cake

    'Apple and spice and all things nice' perfectly sums up this delicious cake that I love to eat for afternoon tea.

    Makes: 1 cake

    • Cake
    • 4 apples, peeled, cored and finely diced
    • 3 tablespoons rum
    • 1 teaspoon vanilla essence
    • 200g butter
    • 3/4 cup (185g) caster sugar
    • 4 eggs
    • 125g ground nuts
    • 2 tablespoons unsweetened cocoa powder
    • 1 teaspoon ground cinnamon
    • 200g plain flour
    • 1 teaspoon baking powder
    • Icing
    • 1 1/4 cips (220g) icing sugar
    • 2 tablespoons rum
    • lemon juice, as needed
    • 2 tablespoons slivered almonds

    1. Cake: Mix apples with rum and vanilla essence; set aside for 1 hour.
    2. Preheat oven to 180 degrees C. Grease a round springform cake tin.
    3. Cream together butter and sugar. Gradually beat in eggs, one at a time, beating well after each addition.
    4. Mix in nuts, cocoa and cinnamon. Mix flour with baking powder and fold into the mixture one tablespoon at a time. Lastly, fold in apples.
    5. Pour batter in prepared cake tin and bake in preheated oven for about 60 minutes. Cool on a wire rack.
    6. Icing: Mix sugar with rum, 1 tablespoon lukewarm water and enough lemon juice to make a thin glaze. Brush onto cooled cake and sprinkle with slivered almonds.
