Almond Oil Biscuit

    These are a quick and easy almond biscuits that use almond oil as well as almond meal. Ideal for morning tea, a snack or the lunch box.

    Serves: 45 

    • 3 egg whites
    • 2/3 cup (150g) caster sugar
    • 1/2 teaspoon vanilla essence
    • 2 drops bitter almond oil (or almond essence to taste)
    • 1 1/3 (150g) almond meal
    • 25g plain flour

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C.
    2. Whisk egg whites until stiff. Gradually add sugar and vanilla essence.
    3. Fold the bitter almond oil, almonds and flour.
    4. Drop 2 tablespoons of batter into piles onto a greased baking tray, leaving enough room to spread.
    5. Bake for 15-20 minutes. Cool on a wire rack.
