Quick Lemon Biscuits

    Lemon is the key to these biscuits so use a big, juicy fresh one. The biscuits are a beautiful buttery lemon which is topped with a sweet lemon icing.

    Makes: 90 depending on size

    • 150g butter
    • 1 1/4 cup (310g) caster sugar
    • 3 eggs
    • 1 untreated lemon, zested and juiced
    • 4 cups (500g) plain flour
    • To Decorate
    • icing sugar
    • lemon juice
    • coloured sugar sprinkles, optional

    1. Line a baking tray with baking paper and preheat oven to 190 degrees C.
    2. Beat butter until fluffy then gradually beat in sugar. Stir in eggs. Mix in the lemon zest and lemon juice.
    3. Sift flour and fold it into the batter with a spatula.
    4. Using a teaspoon scoop small amounts of batter onto the baking tray.
    5. Bake in preheated oven for 10-15 minutes depending on the size of the biscuits.
    6. Leave to cool.
    7. Mix enough icing sugar with lemon juice to make a lemon icing. Spread over the biscuits. If you want them to be colourful you can sprinkle sugar sprinkles on top.
