This cake comes out with a beautiful sweet apple topping with cinnamon flavourings. Chill to slice or serve warm with ice cream.


Serves: 12 

  • Apple
  • 500g apples, peeled, cored and sliced
  • 1/4 cup (60g) sugar
  • pinch ground cinnamon, to taste
  • Cake
  • 80g butter, softened
  • 2/3 cup (155g) caster sugar
  • 1 organic lemon, zest grated
  • 2 eggs
  • 2/3 cup (90g) cornflour
  • 3/4 cup (90g) plain flour
  • 3 teaspoons baking powder
  • 1/2 cup (125ml) milk

  1. Apple: Layer apples in the bottom of a round silicone cake tin or a springform tin lined with foil.
  2. Sprinkle the sugar combined with the cinnamon over the apples then set aside for a few minutes.
  3. Cake: Preheat oven to 160 degrees C.
  4. Mix all the cake ingredients together then use to cover the apples. Bake in preheated oven for about 45 minutes.
  5. Let cool in tin for 10 minutes then invert cake and remove tin.
