    A deliciously moreish lentil salad that is a great addition to any BBQ. Even those who 'don't like lentils!' have been known to come back for seconds!

    Serves: 6 

    • 2 cans brown lentils, drained and rinsed
    • 1 bunch fresh parsley, chopped very finely
    • 2 juice of 2 lemons
    • 1 red onion, chopped very finely
    • 1 tablespoon olive oil
    • 2 teaspoons sugar
    • 1/2 - 1 teaspoon salt
    • 2 tablespoons good quality balsamic vinegar
    • 1 1/2 cups cherry tomatoes, halved
    • fresh ground pepper to taste

    Preparation:15min  ›  Extra time:30min marinating  ›  Ready in:45min 

    1. Drain and rinse lentils and place in serving bowl
    2. Add parsley, onion and cherry tomatoes
    3. In a small bowl whisk together the lemon juice, olive oil, sugar, salt, pepper and vinegar.
    4. Add to lentil mixture, cover and stand for at least half an hour.
    5. This salad is best served at room temperature, but can be chilled over night and served the next day if desired.
