Chipped Cheese Potato Bake

    I put this potato bake together after trying so many other potato sides and felt I'd put my own signature on what I feel is a lovely twist above others.

    Serves: 6 

    • 1 Kg potatoes
    • 1 egg, well beaten
    • 1 teaspoon salt
    • 1/8 teaspoon pepper
    • 1/4 teaspoon nutmeg
    • 1 cup milk
    • 1 clove garlic, peeld and halved
    • 3 1/4 cups grated Swiss cheese
    • 6 tablespoons (120g) butter

    1. Peel potatoes and cut into very thin slices.
    2. Place in a bowl with egg, salt, pepper and nutmeg.
    3. Heat milk to boiling point, pour over the potatoes and stir.
    4. Grease a shallow baking dish and rub surface with garlic. Place potato mixture in baking dish. Sprinkle cheese over entire surface. Dot surface with butter.
    5. Bake at 180C. (moderate oven) for 45 minutes or until cheese topping is golden brown.

    This was easy to make (especially if you have a food processor). Future changes I will make: mix the cheese into the potatoes, and cut the butter amount in half - this is a personal preference because I would like the cheese to be throughout.  -  15 May 2013
