Raspberry and White Chocolate Mousse

    A lovely rich and creamy mouse that uses rasberry liqueur and white chocolate. Garnish with fresh raspberry and curled chocolate.

    Serves: 6 

    • 200g white chocolate, roughly cut
    • 2 tablespoons raspberry liqueur (optional)
    • 1 cup (250ml) thickened cream
    • 2 egg whites
    • 2 tablespoons caster sugar
    • 2 teaspoons vanilla essence
    • salt, to taste

    1. Gently melt the white chocolate with the raspberry liqueur in a double boiler. When smooth add 100ml thickened cream. Set aside to cool slightly.
    2. In a bowl, whisk together the egg whites, caster sugar, vanilla essence and salt until firm. Fold in the white chocolate mixture.
    3. In another bowl, whisk the remaining cream. Fold into the chocolate mixture and chill for 4 hours.
