Homemade Waffles with Cream

    I still cannot work out if waffles are better for breakfast or a dessert but this recipe with cream is definitely dessert.

    Serves: 4 

    • Waffle
    • 3 eggs, separated
    • 2 cups (500ml) full cream milk
    • 2 cups (250g) plain flour
    • 1/4 cup (60g) caster sugar
    • 2 tablespoons oil
    • Cream
    • 100ml thickened cream, chilled

    1. Waffle: In a bowl mix together the egg yolks and milk. Sieve the flour into the bowl then stir in sugar. Mix to remove any lumps.
    2. In a separate bowl whisk the egg whites until stiff. Gently fold into the batter. Stir in the oil.
    3. Grease a waffle maker and preheat. When hot ladle batter into the well and close. Cook for 4 minutes. Remove and cool.
    4. Cream: Pour cream into a bowl and whisk. Spoon some cream onto the waffle. Serve.
