Carrot, Zucchini and Potato Patties

Great as a small entree or a side dish these vegetable patties are extremely tasty and easy to make. Serve with your favourite sauce or gravy.


Serves: 4 

  • 2 carrots, peeled and grated
  • 1 zucchini, washed and grated
  • 1 potato, peeled and grated
  • 1 egg
  • 200g Gruyere cheese, grated
  • 3 tablespoons olive oil
  • salt and pepper, to taste

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Preheat oven to 200 degrees C.
  2. In a medium bowl add all the grated vegetables, the egg, the grated cheese, the olive oil, salt and pepper.
  3. Form into patties and transfer to a large baking dish or on a baking tray.
  4. Cook in the oven for 10 minutes then remove from the oven and turn the croquettes over. Cook for 10 more minutes.

I varied the basic recipe by omitting the cheese, using 2 potatoes and also adding a can of corn kernels, 1 grated onion, chopped parsley, and an extra egg and half a cup of SR Flour. I pan fried instead of baking. Very tasty!!!! - 13 Jan 2016


This recipe is so quick and so easy, I would add a little flour next time, so they stick together a bit better...But they are really tasty!! - 07 Nov 2011


These didn't want to stick together very well, I agree with another reviewer a bit of flour would help that. I also think they need some onion or chives. - 10 May 2013
