Herbed Yoghurt and Vegetable Glasses

    Ideal as a prepared earlier entree these glasses provide layers of colour and taste through the use of a herbed yoghurt, paprika tomato and cucumber.

    Serves: 4 

    • Herbed Yoghurt
    • 150g natural yoghurt
    • 2 tablespoons olive oil
    • 1 clove garlic, finely diced
    • 1 teaspoon finely diced fresh dill
    • 1 teaspoon finely diced fresh oregano
    • 4 mint leaves, finely diced
    • salt and pepper, to taste
    • Cucumber
    • 1/2 cucumber, diced
    • 1/2 teaspoon salt
    • pepper, to taste
    • Tomatoes
    • 3 ripe tomatoes, diced
    • 1 pinch paprika
    • 1 tablespoon olive oil

    1. Cucumber: Place cucumber into a colander. Sprinkle with salt and pepper, let drain for 30 minutes.
    2. Tomatoes: In a bowl, mix together the tomatoes, paprika and olive oil. Set aside.
    3. Herbed Yoghurt: In a bowl mix together yoghurt, olive oil, garlic, dill, oregano and mint. Season with salt and pepper.
    4. To Serve: Pour a layer of each mixture in a glass, alternating colours and layers.
