Fried Turkey and Preserved Lemons

    Turkey breast fillets are fried then combined with the preserved lemons and marinade containing ginger and lemon juice; this makes a rich yet sweet sauce.

    Serves: 4 

    • 2 skinless turkey breast fillets, cut in half
    • 2 lemons, juiced
    • 4cm piece fresh ginger, diced
    • salt and pepper, to taste
    • 30g butter
    • 4 preserved lemons, washed and cut into pieces
    • 4 sprigs flat leaf parsley, diced
    • 4 chives, cut for garnish

    1. Place turkey breasts, lemon juice, ginger, salt and pepper into a large resealable bag. Press out the air and seal the bag. Massage the turkey breasts a little then chill for at least 1 hour.
    2. Remove the turkey from the marinade. Reserve marinade.
    3. Heat the butter in a large frying pan over high heat. Sear the turkey breasts 2 minutes per side. Reduce the heat and cook until golden brown on both sides; about 10 minutes.
    4. Add the reserved marinade and preserved lemons to the frying pan.
    5. Cook for another 5 minutes. Sprinkle with parsley and chives to serve.
